Sucralose powder is an artificial sweetener that is derived from sugar. It is created through a process that chemically modifies sugar molecules by replacing some of the hydroxyl groups with chlorine atoms. This modification enhances its sweetness while reducing its caloric content. Sucralose powder is known for its intense sweetness, with a taste similar to sugar but without the calories.
Chlorination of sucrose results in a 1,6-dichloro-1,6-dideoxyfructose-4-chloro-4-deoxygalactose disaccharide by selectively replacing three of the hydroxy groups in the C1, C4, and C6 positions. Sucralose is approximately 320 to 1,000 times sweeter than sucrose, three times sweeter than aspartame and acesulfame potassium, and twice sweeter than sodium saccharin.
