The sodium salt of glutamic acid is monosodium glutamate (MSG), sometimes known as sodium glutamate. MSG in this glutamic acid form is naturally found in various foods, including tomatoes and cheese. MSG is used in cooking as a flavour enhancer with an umami flavour that increases the meaty, savoury flavour of food, similar to how naturally occurring glutamate does in stews and meat soups.
